Christmas Dinner for One (COVID-19 FRIENDLY)

The creamed spinach and Sweet potato Casserole are versions of my favorite dishes from Ruth’s Chris Steakhouse. ENJOY!

-1oz Oregano
-1 packet of Sazón seasoning
-2-3 cloves of garlic
-2-3 Tbls of Olive oil
-1 Tbls of Apple Cider Vinegar
-1 Tbls of Butter
-Salt and Pepper to taste
-Oven Bag

Sweet Potato Casserole
-1 Large Sweet Potatoe
-2-3 Tbls of Butter
-1 Egg
-1/4 cup granulated sugar
-1/3 tsp of Vanilla
-2 pinch of salt

Sweet potato CasseroleCRUST
-1 Tbls melted butter
-1/2 cup brown sugar
-1/4 cup All Purpose Flour

Creamed Spinach
-7-10 oz Frozen Chopped Spinach
-2 Tbls Butter
-1Tbls 1/2 All Purpose Flour
-1/2 Cup Heavy Cream
-Pinch of Nutmeg
-Pinch of Cayenne Pepper
-Salt and Pepper to taste

Apple Pie
-1 Apple
-Ready to Bake Pie Crust
-1/2 cups of granulated sugar
-1 Tbls Cinnamon
-2 Tbls Brown sugar
-Butter
